Since grains and beans are staples foods around the world, there is no shortage of recipes that feature them. In the nearly two decades since NGGC’s inception, locally grown grains and beans have become much easier to find. Most co-ops and specialty food stores in the Northeast source a good selection of them directly from their local farmers. Another marker of our movement’s success is that the quality of the NE-grown grains and beans is as good or better than what you will find on the open market. The resources that growers have now enable our local farmers to produce consistently high-quality grains in our challenging climate. Many of them specialize in unusual varieties, so you are likely to find a type of grain or bean from a local source that is not commercially available anywhere else. There is a world of possibilities for cooks and bakers who like to experiment!
