In October 2010, Vermont and Maine Researchers and Farmers traveled to Denmark to tour farms, research, mills and bakeries to seek a better understanding of organic grain production and infrastructure in a similar climate to the Northeast.
Vermont farmers traveled to Ohio to learn about the many innovations employed by Levi and Monroe Stutzman at their spelt hulling operation and at Twin Peaks Organic Farm and their diversified grain operation. This was made possible through the Vermont Agriculture Innovation Center and in collaboration with the Northern Grain Growers Association and University of Vermont Extension.

January 2012 – A group of bakers treialed 4 winter wheat varieties grown by the University of Vermont and University of Maine. Randy George from Red Hen Bakery, Jeffrey Hamelman from King Arthur Flour, Jim Amaral from Borealis Breads, and Alison Pray from Standard Baking Company participated.
